RECIPE FOR UTTAPAM WITH ALAM CHUTNEY

Preparation Time: 20 minutes
Cooking Time :25 minutes
Serve: 4

Ingredients Required:

  • 1 cup Semolina
  • 1/4 cup Curd
  • 1 sliced Onion
  • 1 large Tomato, finely chopped
  • 2 Green Chillies, finely chopped
  • 1teaspoon chopped green onion
  • 1tbs sweetcorn
  • 1 teaspoon Oil + for shallow frying
  • Salt to taste
  • 1 pack of Eno

For Alam chutney

  • Cumin 1 tsp
  • Mustard seeds 1+1tsp
  • Curry leaves 8-10
  • Salt to taste
  • Blacksalt ½tsp
  • Ginger 1″piece
  • Garlic 8-10 clove
  • Tomatoes 3
  • Green chilli 4-5
  • Red chilli whole 4-5
  • Blackpepper 1tsp
  • Urad daal 1tbs
  • Chana daal 1tbs
  • Tamarind pulp 2tbs
  • Peanuts 1tbs
  • Dessicated coconut 2tbs
  • Oil 2+1tbs

Method for uttapam:

1.Mix semolina,salt, curd and Eno with a little bit water.

2.Make a thick paste.
3.Grease a non stick pan.
4.Spread this batter on that hot pan.

5.Arrange these veggies in your desired pattern .

For Alam chutney

1.Heat oil in a pan.
2.Add mustard seeds,chana daal,urad daal,cumin and cook till mustard seeds start sputtering.
3.Add curry leaves and whole red chillies.
4.Grind all with tomatoes.
5.Heat 1tbs oil in a pan. Add mustard seeds, when it starts sputtering add that paste and 6.Cook till it start leaving oil.
7.Add all ingredients.
8.Boil temrind with water and strain.
9.Add temrind pulp too.
10.Cook for 2minutes .
11.Alam chutney is ready to serve with uttapam,dosa or idli.
