Meri raj kachori kyun hai hatake kyoki mene uske dough me thode ingredients change kiye he zaara hatake or filling bhi zaara hatake ki he mene filing me bade chole or alu to hote hi he esame but mene fruit(angoor,anar)add kiye he or saath me dry fruits bhi (kaju, akarot,kismis) add kiya hai ise  khane me crunch bhi aata he or feeling different style wali esase raj kachori ka zaara hatake taste lagta he or plate bhi use nahi karni he to thoda different style me presentation kiya hai

Ingredients for dough

1cup suji (semolina)
1/2 cup maida
2tsp besan (gram flour)
2tsp chawal ka aata (rice flour)
1/2tsp salt (as per taste)
1/2 katori water (as per requirement
Oil for frying

For filling ingredients

1cup chole chana boil
2 boil alu chopped
1/2katori angur(grapes) kate huwe
6-7pcs dahi vada ke vade
1 pure anar(POMEGRANNATE) ke dane
10 pcs kaju chopped
10pcs kismis
4 pcs akrot (walnut) chopped
Chat masala for sprinkle
2tsp hara dhania chopped
1katori curd nicely beated
1teaspoon sugar powder
(dahi me add karne ke liye)

**1katori mithi chutney

Ingredients for chutney

(50gm imli±200gm khajur+1tsp red chilly powder+1/2tsp kalongi +1/2teaspoon khada dhania+1tsp salt+pinch of hing+pinch of haldi +1tsp ghee +1/2teaspoon+1/2teaspoon saunf+1/2teaspoon kalongi)

Method :
Imli or khajur ko wash karke cooker me siti baja lijiye  ubalane ke baad thandi ho jaye to usko mash karke chan lijiye or

ek kadai me 1tsp ghee dalke jeera kalonji or khada dhania saunf add karke imli kajoor ka pulp add karde thodi der boil  dijiye

aur  last me sare masale add kare like red chilly powder, dhania powder, haldi powder add karle gas off karde ban gayi mithi chutney

**1katori green chutney
Ingredients
(100gm hara dhania+1/2 mango kachha+25gm pudina+3 green chilly+2 tsp curd+1tsp black salt+1/2tsp bhuna jeera+pinchnof hing+1lemon juice)
Chutney banane ke liye sabko pani se wash karke extra pani nikalake mixi me grind  lijiye chutney ready

**For vada ingredient
1choti katori udad daal (white)
1-2 hari mirch
1inch ginger
8 pcs kismis
Salt as per taste
Oil for frying

Method: udad ki daal ko 5-6 hr bhigode wash karke uske baad usko mixi jar me hari mirch adrak add karke pisle, pani add karna nahi hai  chahot to 1-2tsp pani add kar sakte hai

ab batter ready ho gaya usme kismis or swad anusar salt add karke usko garam oil me deep fry kare fry karne ke baad normal pani me deep kare 15min taki vade soft ho jaye ready he dahi vade ke vade

**1katori Chole chana ko bhi over night soak kare subah cooker me boil karle ready he filling ke  chole

Method: raj kachori

Sare aate mix kare jarurat ke gisab se pani add kare or medium dough lagaye na jyada patala na tight usko rest de 1/2 hr

Ab uski puri jaisi balls banaya or ek ek karke bele ek tab tak oil garam karne rakh de yaad rakhe kachori ko high flame to medium flame pe fry  he ab patali puri  jaisi belate jaye or oil garam nho jaye to ek ek karke kachori dale or uske uper jhariya rakhe taki puri ful jaye or uper garam oil dalate rahe or ful jaye to palat de or gas medium karde ab dono side se sik jaye to usko ek plate me nikalde ir 4hr bahar khule me rehne de taki wo kadak ho jaye koi dabbe me pack na kare bahar hi rakhani he kachori 4hr ke baad aap bhar sakte he ready he aapki kachori

Ab kachori feeling ke liye sara saman ek saath rakhle taki aasani se aap bhar pao kachori

Kachori me sabse pehle vade todake add kare thoda ubala huwa chola boil alu chote pcs me cut kare thoda chat masala sprinkle kare thode hare angoor ko add kare dry fruits add kare anar ke dane ab hari chutney mithi chutney or dahi add kare uske uper fir se hari mithi chutney or curd or garnish ke liye anar ke dane sev bhujia se garnish kare ab taiyar he raj kachori puri feeling ke saath enjoy kare street food ghar pe
