Manchurian is a Chinese dish consisting of a brown gravy with fried vegetable dumplings. I have given it a healthier twist by replacing fried vegetables dumplings with steamed idli dumplings.
Preparation time :14 hours(INCLUDES SOAKING AND FERMENTATION)
Cooking time : 12 MINUTES
- 300 gms boiled/ idli rice
- 100 gms urad daal
- 75 gms poha
- 1 tsp methi seeds
1.Wash and soak everything separately for 5 to 6 hours.
2.Grind urad daal with methi seeds first.Remove in a large vessel.
3.Grind rice and poha together znd mix it with daal mixture.
4.Add sufficient water to make it of pouring consistency.
5.Keep it covered for 7 you 8 hours till well fermented.
6.Pour this fermented batter mixed with salt as per taste , in greased idli moulds and steam it for 10 to 12 minutes.
7.Remove idlis and keep aside.
Preparation time: 10 minutes
Cooking time :15 minutes.
Serving : 5 minutes
- 1 red onion chopped finely
- 3 spring onions chopped white and green separatelyrics
- 8 to 9 garlic cloves chopped very fine.
- Chilli ginger paste 1 tsp
- 7 to 8 beans chopped fine
- 1 carrot chopped fine
- Half cup cabbage chopped fine
- 1 tsp dark soya sauce
- 1 tsp chilli sauce
- 1 tsp tomato sauce
- Half tsp vinegar
- Salt and red chilliesflakes as per taste
- 2 tsp corn flour
- 2 tsp oil
1.Take a wok or a deep pan.
2.Heat oil in it. Add chopped garlic.
3.Fry it for few seconds.Add onions both red and white and fry for 5 minutes.
4.Add chopped vegetables, ginger chilli paste, salt and red chilli flakes. Cook for 2 minutes.
5.Add 1 cup water and cover and cook for 5 minutes till vegetables are tender.
6.Add all the sauces and cornflour paste. Mix well.Gravy is ready.
7.Just before serving add chopped idli peices and boil for 2 minutes.
8.Sprinkle spring onion greens and serve as it is or with steamed rice.
Tip: Idlis can be made in advance and stored in the refrigerator.
