RECIPE FOR PATLA MATHIYA (GUJRATI SNACKS)

Ingredients Required

  • 500 gms mathiya flour
  • 400 gms urad daal flour
  • 1/2tsp ajwain
  • 4tsp oil for moyan
  • 150 gms sugar for liquid base
  • Salt as per taste
  • 1/2 teaspoon white chilli powder (optional)/green chilli paste (optional)
  • 1/2 teaspoon papad khar
  • Oil for frying

For flour slurry

  • 3 tsp mathiya flour
  • 4tsp oil

(isko milake ek slurry banale jaise loyi ban jayegi uspe sari slurry add karke mix karni he taki loyi ya mathiya achhe se bel sake)

Method:

1.Ek bowl me mathiya ka flour or urad daal flour ko chan lijiye usme ajwain, oil ka moyan, salt, papad khar add karke mix kijiye.

2.Ab sugar wale pani ko bhi add kare or jarurat ke hisab se pani add karke tight dough lagaye.
Dough ko turant ki bhari chiz se kute or dono hath se khiche jitna soft dough hoga utana soft mathiya banega.

3.Ab soft dough ke cylinder banale patale se or usko knief ya thread se size ke hisab se cut karle taki sab ek sarikhe bane.

4.Ab bani huyi slurry ko aate ki loyi me milake sari loyi uper niche karle taki sabpe slurry chipak jaye.

5.Ab ek ek loyi lete jaye or patale mathiya bele papad ki tarah

6.Ek bada sa cotton saaf kapada leke uspe bichate jaye sare mathiya bil jaye to usko fry karenge.

7.Ab ek kadai me oil le usko garam kare jab oil garam ho jaye to medium to fast gas pe fry kare dono taraf se or nikal de kadai se.

8.Ek bade bartan ya dabbe me ya airtight dabbe me store kar lijiye.
