Florentine is a Italian baked dish generally made with a layers of spinach, vegetables or meat, white sauce and lots of cheese served as main course along with bread toast. I have given a desi twist to this videshi florentine by changing the vegetables layer with paneer and Makhana layer and Indian spices. Another twist is I have added a Base Layer of garlic toast to make it a complete meal.This dish is decorated with carving of various fruits.
Preparation Time : 10 minutes ( For chopping spinach, garlic, tomatoes and roasting of Makhanas)
Cooking Time:15 minutes
Baking time :18 minutes.
Decoration time 20 minutes( Includes 15 minutes of carving of fruits while the florentine is being baked and 5 minutes for serving the dish with carved fruits.)
2 cups chopped spinach
15 cloves garlic
250 gms paneer
1 cup Makhana
6 garlic toasts
1/2 tsp red chilli flakes, 1/2 tsp garam masala, 1/2 tsp oregano and basil. Salt as per taste.
2 tbsp white flour
2 and half cups milk
2 tbsp butter
2 tsp olive oil
100 gms mozzarella cheese
2 tbsp bread crumbs
- 2 kiwis
2 tsp cherries
Method of preparation
Chop spinach, onion, garlic, tomatoes and roast Makhanas.
In a pan heat 1 tsp oil add 5 garlic cloves chopped, 1 onion chopped and fry for 3 minutes and add palak, salt and garam masalas. Cook for another 5minutes.
Side by side heat a non stick pan add 1 tbsp butter add 5 cloves chopped garlic and add tomatoes pulp. Add red chilliesflakes and salt. Boil for 5 minutes. Remove in a dish. In the same pan heat 1 tbsp butter and 1 tsp oil. Add remaining 5 cloves garlicand add 2 tbsp maida and fry for 5 minutes and then add milk little at a time stirring continuously so that no lumps are formed. Add salt, oregano and basil. Add tomatoes pulp and boil for few more minutes. Add 2 tbsp grated cheese mix well and switch off the gas. Preparation heat oven to 175°. Take a baking dish grease it with butter. Place garlic toasts at the bottom. Spread spinach layer, followed by pink sauce. Keep paneer peices over the pink sauce. Spread a layer of grated cheese. Follow it by adding a layer of palak. Spread a layer of Makhanas. Add remaining sauce over Makhana layer. Spread remaining grated cheese over it. Finally add bread crumbs. Bake it for 18 minutes. The top layer would be browned. Remove and serve immediately.
While the florentine is being baked carve out fruits for decoration.
Bring out the baking tray. Keep this dish on another big serving tray. Arrange fruits on this paneer florentine.
Tip : Do not carve fruits in advance as they will turn dark due to oxidation
