SHAHI BIRYANI PULAO

Ingredients Required:

  • 2 cup basmati rice (soak 30 min )
  • 5-6 tsp ghee/ oil for pulao
  • Oil for frying (onion,paneer,kaju)
  • 2 tej patta (bay leaves)
  • 1dalchini tukada (cinnamon stick)
  • 2 star anise
  • 2elachi
  • 150 gm mutter (peas)
  • 3 onion
  • 1 carrot
  • 1 simla mirch
  • 1 small beetroot (optional)
  • Garlic ginger paste (optional)
  • 15-20 kaju (cashew)
  • 100 gm paneer
  • 2 tsp biryani masala
  • 1 tsp red chilli powder
  • 1 teaspoon dry mango powder.1 tsp coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt as per taste
  • 1 teaspoon jeera
  • Pinch of hing
  • Fresh coriander for garnishing

 

Method:

1.Sabse pehle sare veg cut karle or rice soak karle

2.Oil garam kare or paneer ko fry karke pani me dal dijiye wohi garam oil me 2 onion ko fry kare onion fry karne se pehle onion me thoda salt sprinkle kare taki crispy brown onion bane ab wohi oil me kaju ko fry karke nikale or last me beetroot ko half fry karke nikale

3. Sare veg (mutter,alu,gajar)ko half boil karde

4. Rice ke liye pani boil karne rakhe or rice ko pahale pak jaye tab extra sara pani nikale or usme 2 tsp lemon juice salt or 1 tsp ghee add karke mix kare achhe se

5.Sari chizen ready he ab ek badi kadai le usme 3 se 4 tsp ghee dale jeera hing garlic ginger paste star anise , dalchini,elaichi,tej patta add karke saute

6.Ab onion add karke saute uske baad simla mirch or tometo add kare or boil vegetables add kare achhe se saute 5 se 7 min

7. Ab usme sare spice add kare or mix kare achhe se saath me paneer kaju or brown onion fry bhi add kare or beet root bhi swad anusar salt add karde sabji ke hisab se

8. Ab boil rice ko kadai me dale or sare masale ke saath mix kare
