STUFFED CARROT AND MOONG SPROUTS PARATHA

Ingredients Required:

for dough-

  • 1 cup whole wheat flour
  • 1 tsp clarified butter/ghee
  • salt as per taste
  • water as required

for stuffing:

  • 2 tsps oil
  • 1/4 tsp asafoetida(hing)
  • 1/4 tsp cumin seeds(zeera)
  • 1/4 tsp carom seeds(ajwain)
  • 1/2 cup sprouted green gram/moong
  • 1 inch ginger chopped
  • 1 green chilli chopped
  • 1 medium carrot grated
  • 1 small onion chopped
  • salt as per taste
  • 1/4 tsp chat masala
  • 1/4 tsp garam masala
  • oil for frying paratha

Method:

1.Make a smooth dough out of wheat flour, salt, ghee and water. keep aside for half an hour.

for stuffing-

1.Roughly crush sprouts, ginger and green chilli together.
2.Heat oil in a pan. add cumin seeds, asafoetida and carom seeds.
3.Add onion and saute untill it becomes transparent.
4.Add carrot and cook properly.
5.Now add salt, chat masala, garam masala and sprouts. mix well.
6.Cover with a lid and cook for a minute.
7.Switch off the flame and keep aside the stuffing.

for making paratha-

1.Make medium sized balls from the dough. flatten them into small circles with the rolling pin.
2.Drop enough stuffing and cover the stuffing by sealing the edges of the dough.
3.Dust with flour and roll them gently into parathas.
4.Heat a tawa and place the paratha
5.Drizzle oil and cook the paratha on both sides.
6.Serve hot with pickle or chutney
