Kabiraji is another form of cutlet. Its Kolkata famous street food made of minced chicken covered with egg net.

Ingredients Required:
  • Minced chicken 150gms
  • Chopped onion 1
  • Ginger garlic paste 1tspn
  • Red chilli 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Egg 3
  • Corn flour 1tspn
  • Salt
  • Bread crumbs 2 cups

Method:

1.Make a mixture of minced chicken,chopped onion, ginger garlic paste,salt,turmeric powder,red chilli powder & lemon juice.

2.Make a shape of cutlet & keep it in fridge for an hour.

3.Take some bread crumbs & coated the cutlet with it.

4.Make a mixture of eggs,red chilli powder,turmeric powder & salt.

5.Dip the cutlet in egg mixture.

6.Again coat the cutlet in bread crumbs & deep fry it.

7.When cutlet is ready start the making of nest.

8.Make a mixture of egg, corn flour, salt , red chilli powder & turmeric powder.

9.Keep the flame high & carefully sprinkle the egg batter in hot oil to make a net.Put the cutlet in the net & cover it.

10.Its ready to serve now.Serve hot with chilli & tomato sauce.
