PAV BHAJI – MUMBAI’ FAMOUS

No cutting gadgets theme, isliye mene cutting karne ke liye utensils (eg. Glass, bowl, spatula, spoon etc) ka use kiya hai and pav pressure cooker me banaye hai and isme onion and garlic ka use nahi kiya hai aur jain pav bhaji banayi hai. Is tarah mene  “no cutting gadgets” ke mumbai ki famous street food – “pav bhaji” ki hai tayaar….!!!


Preparation time: 1 hour 45 mins


Cooking time: 35 mins


Serves: 4


Ingredient required:

For pav:

  • Maida (all purpose flour) – 250 grams
  • Butter/oil – 2 spoon
  • Milk powder – 1 tea spoon
  • Salt – 1/2 tea spoon
  • Sugar – 2 tea spoon
  • Milk- 100 ml
  • Yeast – 1 tea spoon
  • Milk for Polish ,  two cup sea salt to bake

For bhaji :

  • Tomato – 4-6
  • Cauliflower – handful
  • Capsicum – 1
  • Carrot – 1
  • Pea – 1 bowl
  • Green chilli – 4-5
  • Ginger – 1 inch piece
  • Red chilli powder – 1 spoon
  • Haldi  powder – 1/2 spoon
  • Kashmiri mirchi powder – 1 spoon
  • Pav bhaji masala – 2 spoon
  • Butter – 4 – 6 cube ( as per your use)
  • Salt – as per your taste
  • Green chilli and lemon for garnish

Method:


For Pav –
1. Milk ko garam kare, yeast and sugar ko garam milk mai achhe se milaye aur 15 minute ke liye yeast ko activate hone ke liye rakh de.
2. Maida and salt ko mix kare fir activate hua yest milaye, acche se mix kare aur daugh banaye jarurat ke hisaab se gungune water use karke aate ko palms ki help se masal -masal kar 10 -15 min tak guthe aur aate ko chikna kar le. Ab aate ko 1hour ke liye kapade se dak kar warm place par rakh de.
3. Atta fulkar dugna ho jayega fir atte ko do se teen min tak masala jarurat lage to sukhi maida chidak le fir aate ke 8 barabar size mai gole bana le isake bad tre mai butter se greasing karke gole rakh de kapare se dak kar fir se 45 – 60 min ke liye rakh de.

 


4. Gas on kare cooker ko do se teen min tak garam kare fir usame namak dal de us par stand rakhe fir balls par milk se polish kare and tre ko cooker mai set kare lid lagaye ( lid mai se rubber gasket and whistle ko nikal de) gas ko medium to high flame par rakhe 20 -25 min tak bake kare usake bad gas off kare tre ko bahar nikale aur Pav par butter se brush kare kapade se dak kar rakh de, thanda hone ke bad spoon ki help se bahar nikale Pav reddy hai….!!!

For Bhaji –
1.sabhi vegetables dho le. Tomato chod kar sabhi vegetables,green chilli and ginger cooker mai rakh kar gas on kare aur ek whistle le. Tomato ek pan mai rakh kar1/2 cup pani dal kar boil kar le.tomato thande hone ke bad grind kare, (grind barikh nahi kare mota rakhe).fir Vegetables thandi hone ke bad mixer mai grind kare. grind barikh nahi karani hai thodi si moti rakhani hai.
2. Ek pan ko gas par rakhe aur on kare usame butter dale Haldi, mirchi dale fir tomato ki puri dal de salt dale 5 min tak gravy tab tak chalaye jabtak tomato oil chod de to usame grind ki hui vegetables dale acche se mix kare pav bhaji masala dale. 5-7 min tak chalaye aur gas off kar de bhaji reddy to eat…!!!
3. Pav ko middle se hatho ki help se kate. Tave par butter dal kar ulat palat kar sake aur pav bhaji masala chidak de.
4. Ek plate mai pav aur bhaji rakhe hare dhaniya se garnish kare butter lemon and green chilli ke sath garam garam serve kare. Jain pav bhaji eat and enjoy mumbai ‘s famous street food……….।

Tips

1. Bhaji mai potato aad kar sakate hai. Pav bhaji masala fresh ghar par bana kar use kar sakate hai.

2. Pav banane mai cooker mai dala hua salt fir se bake ke liye use kar sakate hai.
