Here is a modern twist in the former of shape to our traditional Kaju katli.
Preparation Time: 15 minutes
Setting Time :20 minutes
- 250 gms cashews
- 175 gms sugar
- 2 tsp ghee
- Few strands saffron
- 1 tsp elaichi powder
- 2 drops rose essence
1. Grease a chocolate mould and keep it aside.
2. Take sugar along with half a cup water and boil it.
3. Powder cashews.
4. Once the sugar has reached a thicker consistency , add saffron strands, cashew powder, elaichi powder and rose essence and 1 tsp ghee.
5.Stirring continuously, cook till a soft ball is formed.
6. Very quickly fill the chocolate moulds with the cashew mixture and allow it to cool or alternatively put it in a broad plate with a thick half inch layer and cool it for 7 to 8 minutes and then cut squares and fill the chocolate moulds with it. Press it to the base so that the shape of chocolates is formed. Cool for another 15 minutes or so.
7 Demould chocolates and serve right away or wrap them in fancy wrappers
