RECIPE FOR SOOJI KARARA PITHA

sooji kakara pitha is a typical odia dish popular in the state of orissa. these are mostly prepared during festivals and offered in puja as prasad.These are delicious and very healthy.

Serve:3

Ingredients Required:

for outer layer:

  • 1/2 cup semolina/sooji
  • 1 1/4 cup water
  • 1/4 cup sugar
  • 1/2 tsp cardamom powder
  • 1 tbsp oil

for stuffing:

  • 1/2 cup grated fresh coconut
  • 1/4 cup sugar
  • 1/2 tsp cardamom powder
  • oil for frying

Method:

to make stuffing:

1. Heat a kadhai.
2. Add grated coconut, sugar and cardamom powder.
3. Fry until sugar melts and the mixture becomes little dry.
4. Switch off the flame and keep aside the stuffing.

to make outer layer:

1. In a kadhai add water and sugar, boil it.
2. When it starts boiling, add semolina stirring continuously to avoid forming lumps.
3. Add oil and cardamom powder.
4. Cook this mixture for a minute.
5. Remove from flame and keep aside.


6. Wait till the dough cools down to room tempreture.
7. Knead the dough for few seconds to make this soft.
8. Make small balls from the dough, flatten slightly and put stuffing to it.


9. Then roll it again to make a ball.
10. Make the balls into flat shape in between your palms.


11. Heat oil in a kadhai and deep fry the flatten balls on medium flame till it turns golden brown from each side.
12. Delicious kakara pitha is ready, serve hot or cool.
